Recipe by Best Foods from The Leftover Lunch Truck Ingredients 1/2 cup Best Foods mayonnaise 1/2 cup plain yoghurt 1 tsp curry powder 1 lemon, juice and zest 1/4 cup fresh mint, chopped 1/4 cup fresh parsley, chopped, plus extra to garnish 1 head cos lettuce, quartered lengthwise approx. 300g leftover roast pumpkin approx. 300g leftover roast potato 1/2 red onion, finely sliced 2 Tbsp toasted seeds (e. g. pumpkin or any others in your pantry) 2 Tbsp chopped dry fruit (e.g. apricots, sultanas or any others in your pantry) Salt and pepper to taste Method Mix Best Foods mayonnaise, yoghurt, curry powder, lemon juice and zest and herbs together. Season to taste. Heat a little oil in a pan and grill cos until slightly charred. Remove from pan and place in serving dish. Place pumpkin, potato and red onion in a large bowl and pour over mayonnaise mix. Carefully stir until coated. Sprinkle over seeds, chopped dry fruit and parsley and serve. — SERVES 4
